  • About this Coffee: Finca La Chiripa is owned by Mauro Hernandez Moreno. It is located in the town of Puerto Rico within the region of Chiapas. Finca La Chiripa is certified organic and is made up of 5 hectares, 4 of which are planted in coffee. Chiapas is known for its humid and tropical climate, ideal for farming many tropical crops. Mauro is a member of the Campesinos Ecol├│gicos de la Sierra Madre de Chiapas (CESMACH) This cooperative is well known for its strong commitment to protect the Triunfo Biosphere Reserve. The reserve's ecosystem is home to a variety of plants and animal species considered rare or in danger of extinction. This microlot is an enjoyable everyday drinker. The toasted almond, coupled with sugar browning aromatics and sweetness, lead the way into a juicy and tannic mouthfeel that is comparable to a pear. This method is specific to Indonesia and gives the coffee a unique flavor profile. This coffee is a little earthy and herbaceous, with an essence of shredded wheat, and a sweet dried fruit finish like Medjool dates.
